8 C. chicken broth 2 28 oz.cans tomatoes, undrained 1 small can of mild green chilis 1 bunch cilantro 1 T. cumin 1 bay leaf 1/2 t. pepper 1 T. onion powder 3/4 t. garlic powder 1 can black beans, drained 2 C. cooked, chopped chicken 2 C. cooked rice
In a blender or food processor, pulse one can of tomatoes, the chilis, and the bunch of cilantro (washed and most of stems cut off) until chopped up but still chunky. Pour all this into a large stock pot. Add the other ingredients and simmer for 5 minutes. Serve each bowl topped with a bit of cheese. So good on a cold night.
